ELK TACO SOUP

1-2 pounds ground Elk
1 med to large onion chopped
4-6 cloves fresh garlic
2 tbsp. oil
1 can corn un-drained
1 can black beans-drained/rinsed
1 can diced green chilies
1 can chopped tomatoes with chilies
1 can tomato sauce (regular size)
1 envelope taco seasoning
1 diced avocado
1 cup shredded cheddar cheese
Small bag Fritos corn chips

Season meat to taste with onion powder, lemon pepper, Lowry’s seasoning salt, crushed red pepper, salt, and pepper.

Prep Time: 15 minutes
Cook Time: 6-8 hours Crock Pot
Yield: Serves 8 to 10

Preparation:
Add chopped onion to hot oil in large skillet. Cook until tender; then add diced garlic. Add ground Elk meat, season meat to taste with suggested seasonings, and cook until no longer pink. Drain well and transfer to crockpot. Add corn, black beans, tomato sauce, chopped tomatoes with chilies, taco seasoning, and diced chilies. Stir well. Cook on LOW for six to eight hours. Season with Salt and Pepper to taste.
Serving:
Take a bowl and place a handful of Fritos corn chips in the bottom, then fill remainder of bowl with soup. Garnish the top of the taco soup with small amount of Fritos chips, shredded cheddar cheese, diced avocado, and fresh cilantro.
